Suggest a better descriptionSaucepan combine sugar, salt, pepper, ginger, cinnamon, clove and 1 cup water. Boil and stir to dissolve the sugar, reduce and simmer for 5 minutes. Remove from heat and add ice water. Place roast in the brine and store overnight. Remove roast from brine, preheat oven to 450 and roast for 15-minutes. Reduce to 325 and roast for 1-hour (125-130 degrees medium rare). Remove from oven and ten for 10-mminutes to rest. Slice across the grain
