A crust-less quiche is just as rich and satisfying ,quicker to make & healthier, than quiche with a crust. You can use this basic recipe as a starting point, and add other ingredients to the quiche as well, such as cooked sausage and other vegetables.
Preheat oven to 425 deg F.
Butter a 10-inch round or 13 x 9-inch baking dish.
Blanch broccoli in boiling water, then drain and place in ice bath.
Whisk together eggs, coconut milk, butter, nutmeg, salt and pepper. Stir in broccoli and cheddar cheese.
Pour into baking dish with broccoli and back for 25-30 minutes or until set in the middle.
