Broccoli Cheese Casserole
2 8oz packages chopped broccoli
1c Dukes Mayo
1 can cream of mushroom soup
2 large eggs (beaten)
4tbsp butter
16oz Original Velvetta
1tsp onion powder
4tbsp butter & 2 sleeves of ritz crackers for the topping
Cook broccoli according to package directions and set aside.
In large sauce pot, combine cream of mushroom soup, mayo, butter, beaten eggs, and onion powder. Heat til it starts to bubble then add cubed velveeta cheese (1 inch squares makes foe easiest melting). Stir continuously until cheese is melted. Remove from heat and add cooked broccoli. Stir to combine ingredients well and add to baking dish.
Melt 4 tbsp butter, then crumble 2 sleeves of ritz crackers into butter. Mix well and use this to top the broccoli cheese mixture. Bake at 350 for 30 mins.
