Lots of similar dishes, but we all really love this one.
Preheat to 350f.
Pound chicken so that it's thin enough to be able to roll it up with stuff inside it.
Spray a cookie sheet with non-stick spray, or use a pizza stone.
If using regular cheese slices, layer all 4 American cheese on top of each other and slice vertically into four even rectangle cheese stacks. Take a whole slice of swiss and put one of the 4 stacks of American onto the center of the slice of swiss. Place some of the chopped broccoli on and around the American cheese stack, and wrap the swiss around both, creating a small packet.
Place the cheese and broccoli packet into the center of a flattened chicken breast, then wrap the chicken around it.
If you used another kind of cheese and don't have slices, don't worry about the stacks and all - just place the shreds or pieces or slices wherever on the chicken with the broccoli.
Carefully dredge the stuffed chicken breast in the flour, then coat in the beaten eggs. Then coat the chicken in the breadcrumbs.
Secure the edges with toothpicks. Repeat for all the chicken breasts.
Bake in the oven for about 30 minutes, until golden brown and chicken is at 165.
Remove toothpicks before serving.
