Healthy Tater tots, great for St. Patty's lunches.
Blanch 2 cups of broccoli in boiling water for a few seconds (not longer than a minute). Pulse broccoli for 2-3 pulses or dice by hand. Combine with egg, cheese, onion, parsley, and breadcrumbs. Shape into tots and place on parchment lined or oil cookie sheet. Bake at 400F for 18-24min.
