In a bowl, combine salt, pepper, grated garlic, mustard, brown sugar, red pepper flakes and Canola Oil until paste has formed
Liberally season the fish with salt and pepper. Smear the paste onto the flesh side of fish.
Heat a cast iron skillet or oven proof on the stove and then add a bit of oil to the pan. Cook the fish skin down until it is golden brown on one side, flip an place in the hot oven to cook through. Cook to desired temperature.
Garnish with lemon or lime.
