Ultimate Brownie recipe from Betty Crocker cookbook 1988, without walnuts
1. Heat oven to 350°F (180°C). Grease bottom and sides of 9-inch square pan (about 23 x 23 x 4 cm) (or large enough to hold all the batter...). In saucepan melt butter and chocolate over low heat and stir constantly. Cool slightly. (You can also do this in the microwave as it will be a lot faster and doesn't alter the taste).
2. In medium bowl, beat sugar, vanilla and eggs with electric mixer on high speed for 5 minutes. Beat in chocolate mixture (chocolate and butter) on low speed. If you are a student or like to work those forearms like me you can do this with a hand beater. ;) Beat in flour just until blended. (If desired you can add 1 cup of chopped walnuts but we never do this.) Spread in pan.
3. Bake 40 to 45 minutes or just until brownies begin to pull away from side of pan. Cool quickly in pan on cooling rack. Cut into cubes of desired size.
- Don't use self-rising flour.
- Add flour a little bit at a time while beating to make things easier and not get lumps of flour.
- For good baking time you can do the tooth pick test. Use a clean tooth pick (always) to pick brownie mix. The side should be slightly dry and the inside moist. That's when you pull it out.
- Remember that batter will keep baking even outside of oven so don't hesitate to pull out a little too soon rather than too late.
