This takes a while to prepare, despite its length it is simple and tastes amazing
Shredded Beef
1. Place all ingredients in a slow cooker on high
2. Cook for about 5 hours until beef is very tender
3. Strain sauce into bowl and set aside for use later
4. Shred beef with a fork and set aside
Enchilada Sauce
1. Heat oil in a fry pan over medium heat
2. Stir in flour and chili powder, cook for about 1 min stirring constantly using a whisk
3. Add all other ingredients and cook stirring constantly until thickened (about 5 min)
Enchiladas
1. Pre-heat oven to 180 degrees
2. Place about 2-3 tablespoons of beef into each tortilla and roll up
3. Placee each rolled tortilla in an oven dish
4. Pour enchilada sauce over the top
5. Sprinkle cheese over sauce
6. Cook for 10 min in oven
7. Grill for 5 min on high to brown cheese
8. spoon sour cream over top
9. Sprinkle with fresh coriander
10. Pour shredded beef sauce onto plate and place enchiladas on top to serve
Best served with Browns Southern Slaw
