This recipe was taught to me by my father in law who is mad for fresh peppers, for anyone in NZ, my father in law is the great 'Poppa' from Ohakune so you know his recipes are legit!
Enjoy these peppers tossed with spaghetti and feta cheese, on a crusty white bun, chopped up and mixed into fried rice or add eggs for an omelette with bite. Its versatile and delicious. Poppas favourite is on crusty white bread.
Peppers:
1. Heat butter and oil in frying pan on a medium heat
2. Poke wholes in in peppers with a fork and and cook (whole), covered, for 10 minutes until they start to soften, turn a few times. Don't worry if you get some charred bits, it just adds to the flavour
3. Add the onion and jalapenos and cook for about 5 min, until soft
Dressing:
1. Mix ingredients together in bowl
2. Add half dressing to fry pan and cook for 2 minutes
3. Pour rest of dressing directly over peppers when serving
* Spaghetti: If adding cooked spaghetti and feta, add these to the frying pan just before stirring in the dressing. Also stir in all the dressing for this.
* Fried rice: chop peppers up and stir into rice, add some Chorizo just cause you can
* Omelette: Add 4 eggs, salt, pepper and serve with bread
When fully cooked the peppers will be soft right through, you can add almost any chilli variety to mix it up or ramp up the heat if desired
