Pretty good salad which offers something a little different.

1. Put kale on a cutting board and rough chop into small pieces, removing any thick woody stems.
2. Place kale in a large bowl and drizzle with the olive oil. Massage oil into kale firmly for 1 to 2 minutes. Kale will wilt slightly and shrink in volume.
3. Drizzle with salad dressing.
4. Add remaining ingredients. Toss gently and thoroughly.
Delicious immediately, but also refrigerates well for up to 3 days.
