We make probably every Sunday!
Add olive oil to a large skillet. Cube the potatoes, and add to the skillet. Brown on medium low until the potatoes are soft, about 45min, turning often. Generously top with pepper seasoning throughout.
In another skillet, brown the bacon and remove. Then brown the sausage and remove. Then heat thru the ham. Crumble the bacon and mix with the sausage and ham. Evenly split into 4 separate small skillets, all over low heat.
Once the potatoes are finished, also evenly split into the 4 separate skillets, and mix with the meat. Top with the shredded cheddar in each skillet.
In the same large skillet, used originally for the potatoes, cook 2 eggs per person to order (e.g. Over Easy, Scrambled, Sunny Side Up, etc) and top in each of the 4 skillets.
Serve each person their skillet! Best with tabasco!
Optionally: Top with chives
