Oniion, garlic tomato stuffed mushrooms topped with Blue Cheese
Clean mushrooms ans take the stem and sponge part out
Dice the tomatoes, onion, and half the mushroom stems
I sweat my tomatoes by placing them to the side and giving them a healthy sprinkle of kosher salt
In a bowl mix the tomatoes, onion, olive oil, minced garlic, and herbs
Stuff your mushrooms with this bruschetta mixture
Place a large crumble of blue cheese on each mushroom
Broil in oven until the cheese has melted
I can make this recipe really quick because it doesn't take me long to chop everything. Everyone loves this recipe and it is great if a guest drops by!
