Suggest a better descriptionQuarter tomatoes and remove seeds. Coarsely chop tomatoes. Place tomatoes in a colander and sprinkle with salt. Allow the tomatoes to "weep" for at least an hour. Peel and mince garlic. Mix garlic with olive oil, cracked pepper, and chopped basil leaves. Set this aside. Add tomatoes to this mix when ready to serve.
In a separate bowl prepare the Bruschetta Dressing. Mix together the olive oil, parmesan, cracked pepper and garlic.
Cut loaf of baguette bread into one inch slices. Put the bread on a cookie sheet. Place sliced cheese on top of bread. Cover the mozzarella with Bruschetta Dressing. Cook in a 350 degree oven for 10 minutes. Place a second baking sheet with pine nuts on lower rack for 2-4 minutes to roast.
After removing bread from oven, top with tomato mixture and garnish with pine nuts.
I find that I need more Bruschetta Dressing then it calls for. I also like to add more olive oil to it so that it's easier to spread onto the bread slices.
