Preheat the air fryer to 200°C - this will be for the chicken and flatbreads later.
PREP THE CHICKEN AND FLATBREADS
Cut 2 chicken thighs into bite-sized chunks, then cut 2 flatbreads into similar-sized squares on the same board.
GET READY TO COAT
Beat 3 tbsp of flour with 6 tbsp of water and a generous pinch of salt in a large mixing bowl, add a splash more water or a bit more flour to make a batter that resembles double cream. In another bowl, toss 6 tbsp of breadcrumbs with 1 tsp of smoked paprika and 2 tbsp of oil.
COAT
Coat the chicken chunks first into the batter, then toss them with the oiled crumbs to coat them fully.
LOAD THE AIR FRYER
Load the coated chicken into the air fryer, then surround the nuggets with the chopped flatbreads.
FRY
Fry for 10-12 minutes, until the nuggets are golden all over, the chicken is cooked throughout and the flatbreads are golden and crispy. Wash your board, knife and hands, then get on with the rest of the dish in the next steps while you wait.
ASSEMBLE THE DRESSING
Add 3 tbsp of mayonnaise to another large mixing bowl, then peel and finely grate in 1 clove of garlic. Tip in 1 tbsp of cider vinegar and mix together. Season with salt and pepper.
PREP THE GEM
Cut 2 heads of lettuce into 4-6 wedges each.
TOSS AND COAT
Once the nuggets and flatbreads are ready, transfer the lettuce to the bowl with the dressing. Toss to coat.
PLATE UP
Divide the salad between plates.
FINISH THE CHICKEN
Drizzle 4 tbsp of sriracha over the chicken and crispy flatbread, then toss in the draw of the air fryer to coat.
SERVE
Arrange the chicken chunks and crispy flatbread over the salad, finish with leaves from 15g of parsley and serve.
