Try this Buffalo Chicken Potato Bake recipe, or contribute your own.
Suggest a better descriptionPreheat oven to 500. (Yes, really 500).
Spray 9x13 casserole dish with cooking spray.
In a large bowl, mix together olive oil, salt, paprika, pepper, garlic powder and hot sauce.
Add cubed potatoes and stir to coat.
Carefully scoop the potatoes into the prepared casserole dish, leaving as much of the oil mixture as you can in the bowl, this will serve as the marinade for the chicken.
Bake potatoes for about 30 mins until cooked through and crispy on the outside.
While potatoes are baking, add the cubed chicken into the bowl with the oil mixture and let marinate.
Once potatoes are fully cooked lower heat to 400. remove from oven and top the cooked potatoes with the marinated chicken.
top the chicken with the shredded cheese, bacon and green onion.
Return the casserole to the oven and bake an additional 15-20 minutes until the chicken is cooked and topping is bubbly.
Serve with extra hot sauce and Ranch or Bleu Cheese dressing.
