My mom knew to always use a good buttercream frosting on any cakes. No vegetable shortening allowed.
Beat on No. 1 speed until blended, then beat on Speed 4 until thick enough to spread - about 3 minutes. More milk or powdered sugar may be added to give desired consistency. (Make thicker in summer due to heat.) Should spread well, but peaks should stay up. I recommend you add a little to a frosting bag and doing some piping to test for desired consistency before removing/cleaning the mixer.
Orange Butter Icing: Substitute orange juice for milk. Add grated rind of 1 orange - omit vanilla.
Chocolate Butter Icing: Melt 1 1/2 ounces of unsweetened chocolate. Add while beating on No. 1 speed.
