Buttercream to fill cakes of decorate
Put the sugar and 4 tablespoons of water in a small heavy bottom pan and heat gently, without boiling, until the sugar dissolves. Then boil til temp is 225 on a sugar thermometer (takes about 5 minutes) do not let it carmelize.
Put the egg yolks in a heat proof bowl and mix. pour hot sugar water into the bowl with a steady stream, whisking constantly with a mixes. Keep whisking unteh the mixture because thick and mousse like, pale in color and cold.
Whisk in the soft butter, followed by flavoring (vanilla, choc or coffee). Spoon or pipe the buttercream on the cakes. IN warm weather chill the decorate cakes until icing is firm.
