Microwave each squash 15-20 min until very soft. Poke w/fork first. Peel and scoop out seeds. Mash squash into bowl, add half butter & sugar, bake for an hour. Add rest of ingredients and bake for another hour. Blend with immersion blender until very smooth. Serve, or freeze.
