Spicy pork chop stuffed with andouille sausage and chicken with a parmesan crust.
Butterfly and season meat (inside and out). Set a side.
Roast the poblano and skin it. Dice up all the ingredients for the stuffing. Sweat the celery and onion in bacon grease, once they are going throw in the pepper and garlic. Once the onions are translucent throw in the sausage and chicken (you could always double the sausage if you don't have any chicken laying around).
Put the breadcrumbs, stir, add the stock till it is all moist.
Pan fry the pork chops for about a minute on each side just to get a little crust on it. Take them out of the pan and stuff them with the stuffing. Place them in an iron skillet the you sprayed with canola oil. Sprinkle the cheese over the chops then sprinkle on the seasoning.
Put them in the oven at 350 for 30 minutes then jack up the oven and finish off at 450 to try and make the cheese a little brown.
While the chops are in the oven throw together the gravy. I made mine by melting butter in the pan I made the stuffing in. Then add the flour and stir and cook, and cook and stir, till it is a light tan (this as you probably know makes roux). In a separate pan having 2 cups of beef broth close to a boil. Add the roux to the broth until you get it to the consistency you want. Add salt to your taste.
Plate the chops and pour the gravy over it. Chow down!!
Don't over cook, it will make the pork chops dry.
