Cold bean salad with tomato vinaigrette- can be served with tuna to make into main dish
Rinse cannellini beans with water- may combine with other beans (e.g. Black beans) as desired. Chop red onion, cut cherry tomatoes (multiple colors and sizes make a nice flavor and presentation addition). Combine beans, onions and tomatoes In a bowl with vinegar and oil, salt and pepper, add basil. Maya be served as a salad, or turn into a main dish by putting chunks of grilled or canned tuna on top- have also used smoked salmon.
