Suggest a better description1. Mix all marinade ingredients together (soy sauce and following). Velvet chicken with marinade for 3 minutes. Let sit for half hour or longer.
2. Dredge in starch while pan heats up on high.
3. Add oil to pan and let heat to shimmering. Turn heat to medium-low and add chicken skin side down. Cook until golden, 2-3 mins.
4. flip and cook until golden, 5-6 minutes.
5. Once both golden brown, flip back to skin side and cook 1-2 mins to make crispy.
6. Push chicken to sides, add garlic and cook 10 sec. Add sliced onion and spread out until fragrant, 20 sec. Add cooking wine, cover, and let steam for 30-40 seconds.
7. Uncover and add garlic salt, then mix thoroughly and serve with rice.
