Peel carrots and slice down the middle. If working ahead, cover with moist
paper towel and keep in refrig til needed.
Add oil to saute pan with a lid. Heat over med hi heat. Place carrots in the pan, flat sides down. Cook, uncovered for 2-3 min. Add water and cover. Let carrots steam with the lid on for about 15 min. Let cook, uncovered for about 5 more min. When carrots are nicely caramelized and cook thru, finish seasoning them with salt and lemon juice. Sprinkle with parsley if desired.
