Great Thanksgiving leftover meal
1. Lightly coat a 4- to 5- slow cooker with cooking spray. Place turkey in prepared cooker.
2. In a small bowl, combine onion, ginger, allspice, cumin, 1/4 teaspoon of the salt, 1/2 teaspoon of the pepper, the garlic salt, and thyme. Pour over turkey; stir to coat. Add sweet potatoes, broth, and coconut milk.
3. Cover and cook on low 4 1/2 hours, stirring in rice, beans, and remaining 1/4 teaspoon salt and 1/4 teaspoon pepper the last 10 minutes of cooking.
4. Stir in cilantro and lime juice.
