Suggest a better descriptionWash the Carragreen and steep for 15 minutes in warm water; this will remove much of the dried salt. Place the Carragreen into a saucepan with the milk, salt, and lemon rind. Bring the mixture to a boil over medium-high heat, then reduce the heat to a simmer. Make sure to stir the mixture frequently so it does not burn. When it is thick enough to coat the back of a wooden spoon, stir in the sugar.
