Ingredients
1 1/2 Cups Mazola Oil
4 Eggs
2 Cups All-Purpose Flour
2 Cups Sugar
1 Teaspoon Salt
2 Teaspoons Baking Powder
1 1/2 Teaspoons Baking Soda
2 Teaspoons Cinnamon
3 Cups Finely Grated Carrots
Frosting
1 Package Cream Cheese
1 Stick Butter, Room Temperature
1 Box Confectioner's Sugar
Dash Salt
1 Teaspoon Vanilla
Buttermilk Glaze
1 Cup Sugar
1/2 Teaspoon Baking Soda
1/2 Cup Buttermilk
1 Tablespoon Light Corn Syrup
1/2 Cup Butter
1 Teaspoon Vanilla
Directions
In large bowl place oil.
Add eggs, one at a time, beating after each addition.
Sift dry ingredients together and add to egg mixture gradually.
When thoroughly combined, remove mixer and with a wooden spoon, fold in carrots.
Grease 9" x 13" pan for batter.
Bake @ 350F for 45 - 55 minutes. Watch carefully after 40 minutes, and when cake starts to pull away from sides of pan, test with toothpick.
Remove from oven and slowly pour buttermilk glaze over hot cake. Cool cake in pan until buttermilk glaze is totally absorbed, about 15 minutes.
Frosting
Blend all ingredients. If dry add milk by teaspoon.
In a small saucepan over high heat, combine sugar, baking soda, buttermilk, butter, and corn syrup.
Bring to a boil. Cook 5 minutes, stirring occasionally.
Remove from heat and stir in vanilla. Set aside until cake is baked.
