Preheat oven to 350.
Grease and flour a 9x13 inch pan.
In a large bowl, beat together eggs, oil, white and brown sugars, and vanilla. Mix in flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Stir in carrots and pineapple. Fold in pecans, raisins, and coconut. Pour into prepared pan.
Bake in preheated oven for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
These can also be made muffin size. Bake for 19 to 20 minutes for standard size or 8 to 10 minutes for mini muffins.
Frost with cream cheese frosting.
