Preheat 350.
In large bowl, combine sugar & oil. Beat well. Add eggs, carrots, and 1 tsp vanilla. Beat until smooth. Combine flour, salt, soda & spices in separate bowl. Add to creamed mixture and beat well.
Pour batter into 2 greased 9" round pans.
Bake for 30 mins at 350. Cool in pans for 10 mins, then transfer layers to wire racks.
Meanwhile, make frosting: Combine cream cheese & butter, beating until light & fluffy. Add 1 tbsp vanilla & powdered sugar. Beat until smooth.
Fill & frost the cake with cream cheese frosting.
