Heat oil in deep skillet pot. Add chickpeas and carrots. Cook for a few minutes until slightly browned. Add 8 oz broth and pepper. Crush chickpeas. Add remaining 8oz broth. Bring to a boil then simmer for 5-minutes covered and another 5-minutes uncovered. Mix in hummus. Top with onions when serving.
