On a rimmed baking sheet, toss together carrots and olive oil. Bake carrots until soft, 25-30 minutes, Reduce oven to 350.
In a food processor place warm carrots and 1/4 cup warm water and process until smooth.
Oat Walnut Streusel
While carrots cooking make streusel. In a large bowl combine walnuts, brown sugar, flour, oats, salt and cinnamon. Using a pastry blender or your hands cut or fold in cold butter until pea size. Freeze for 10 minutes or ready to use.
Spray a 12 cup muffin pan with baking spray. (I used baking spray with flour. Can also line with muffin cups and spray cups with baking spray.)
In a large bowl, whisk together flour, baking powder, salt, cinnamon, nutmeg and ginger.
In another large bowl, whisk together sugars, and eggs. Add oil and milk, stirring until well combined. Add pureed carrots, and whisk until smooth. Add sugar mixture to flour mixture and whisk or stir until combined. (Mixture may be lumpy)
Spoon batter into prepared muffin cups unto batter reaches the top. Evenly sprinkle Streusel on top. Press streusel lightly into muffins.
Bake until a wooden pick inserted in center come out clean, 20-25 minutes. Let cool in pan for about 10 minutes on wire rack. Remove from pan and let cool on a wire rack for 5 minutes. Serve warm or let cool and serve room temperature.
