Cauliflower and vegetable fried rice that tastes like the real thing
Prep cauliflower: pulse some rough pieces in food processor. End product should resemble small grains of rice, better to have some bigger pieces than to small, it will be mushy
Stir fry : Heat 1 tbspn sesame oil in large skillet of med heat. Add carrots, garlic and onion. stir fry till fragrant about 5 minutes. Add the
Cauliflower, edamame and remaining sesame oil to the pan. Stir fry quickly to cook the cauliflower to a soft texture, stirring constantly , do not over cook.
Make a well in the middle, turn the heat down, add the eggs. Stir gently and continuously until eggs are fully cooked. Stir in soy sauce and green onions just before serving.
