Grated cauliflower stir fried with onions, mushrooms, with an Asian flare of Hoisan sauce and soy sauce.
1. Heat oil in large skillet over medium high heat.
2. Add the diced onions, sautéing until translucent, then add the garlic until also translucent.
3. Add the mushrooms, sautéing until softened.
4. Season with salt and pepper to taste.
5. Add the cauliflower, and more oil as needed, sautéing for 4-5 minutes until beginning to brown (be careful not to overlook—they will get mushy). Stir occasionally (letting it stand for intervals will promote browning).
6. Reduce heat to medium and add the soy sauce and Hoisin sauce, stir constantly to avoid burning the sugar as the pan cools.
7. Push the stir fry to the side of the pan and add the eggs, scrambling them separately briefly until they just begin to set, and then stir back into the mixture to distribute evenly.
8. Serve with a garnish of the green onions over the top for color.
