Suggest a better description- Cut cauliflower head in half and then cut each half into 3 sections (sized to fit into a grater or food processor with a grater blade) Grate it all up. It will look similar to rice
- Heat olive oil in large skittle and add garlic and ginger and cook for about 30 seconds, add onion, carrots, and peas. Cook for 5 minutes on medium high, stirring regularly.
- Add grated cauliflower, soy sauce and sesame oil. Cook for a few more minutes still on medium high heat.
- Push cauliflower mixture to the side to create enough room for the chicken. Add the chicken and cook for about 2 or 3 minutes. PLEASE NOTE: Because the chicken is sliced so thin, it doesn't take long to reach the food safety approved temp of 165 degrees. Again, you're cooking this in a 400 degree skittle.
- Push chicken to the side once it's cooked and add a tiny bit of oil to the cleared area of the skittle. Add two eggs and stir them around until they're scrambled and cooked.
- Mix the whole lot together and let them be good friends for a few more minutes, still on high heat. Be careful to stir a lot so nothing burns.
- Taste it. If it's gross, add more soy sauce or sesame.
- Add scallions to the finished dish and serve :)
