Keto friendly fried rice
1) rice the CAULIFLOWER
2) combine EGG AND EGG WHITES in small bowl and beat with fork, season with SALT.
3) large saute pan or wok spray with COOKING SPRAY then add EGGS and cook till set; then set eggs aside.
4) add SESAME OIL and sauce ONIONS, SCALLION WHITES, PEAS and CARROTS, and GARLIC about 3-4 minutes until soft. raise heat to medium high.
5) add CAULIFLOWER RICE and SOY SAUCE mix cover and cook 5-6 minutes, stirring frequently. (you want cauliflower to be crisp on outside and tender inside.
6) add eggs, mix in then remove from heat
7) mix in the scallion greens
