rub inside of bowl with garlic clove
boil small pot of water, pierce tiny hole in broad end of egg w/needle and boil for 60-90 secs. crack them into the salad bowl.
beat the eggs w/fork, gradually add lemon juice, then olive oil
Stir in anchovies and worcestershire. add salt and pepper. toss well w/lettuce. top with croutons and parmesan. toss again at table.
add shrimp or scallops for a meal.
