Suggest a better description1. In mixing bowl of a stand mixer, combine yeast and water. When yeast is dissolved and starting to bubble, as sugar, salt and oil and mix well.
2. With the paddle attachment on low speed, begin adding the flour and combine thoroughly. The dough should become soft and cohesive. If it seems sticky, add a little more flour. Turn up to medium speed and knead for 5 minutes. The dough should be smooth and elastic.
3. Turn dough out on to a lightly floured surface and knead by hand for 2-3 minutes. Place dough in a lightly oiled bowl and cover with plastic wrap or a clean kitchen towel. Allow to rise until doubled in size, about 25-35 minutes.
4. Mix Kosher salt and poppy seeds and set aside.
5. When the dough has risen, cut into four equal pieces. Roll each piece into a long cylinder as uniform as possible. Sprinkle the salt-poppy seed mixture onto the work surface and roll cylinders to lightly coat. Place loaves onto baking sheet lined with parchment paper and, using kitchen scissors, cut each loaf into 9-10 rolls, twisting slightly to seperate. Brush loaves thoroughly with Chef Larry's Blessing and refrigerate for 30 minutes before baking. (They can be refrigerated for up to 8 hours.)
6. Bake at 450 degrees for 10 minutes, lower temperature to 400 degrees and bake an additional 10 minutes or until golden. Brush with more blessing and serve immediately.
