This cheese ball includes bleu cheese; another similar version has cheddar cheese instead.
Grate Old English cheese; mix first five ingredients well and form into a ball. Chill until nearly ready to serve. Mix nuts and parsley together and roll the cheese ball in this mixture to coat. Serve with crackers
This freezes well, if there is any left.
Note: some folks don't like bleu cheese. Finely shredded cheddar cheese works very nicely in this cheese ball. I have also used Old English cheese that comes in a jar; this increases the creaminess of the cheese ball.
