Butter sides of a 10 inch spring form pan. Coat with a mixture of cracker crumbs and 3 Tablespoon sugar.
Combine remaining crumbs and melted butter; blend well. Reserve 1/4 cup buttered crumbs. Pat remaining crumbs over bottom of pan. Set aside.
Beat cream cheese until light and fluffy. Blend 1 1/4 cups sugar and the flour gradually beat into cream cheese. Add lemon rind and egg yolks one at a time; beating well after each addition. Blend in sour cream and vanilla.
Add salt to egg whites and beat until soft peaks form. Add 2 Tablespoons sugar, beating constantly. Beat til stiff. Carefully fold into cheesecake mixture. Pour into prepared pan. Sprinkle reserved crumbs on top. Bakin in a pre-heated 325 oven for 1 hour.
Turn off heat in oven and set oven ajar . Cool in oven for 3-4 hour completely and chill thoroughly before serving.
