Fry the bacon until crisp, remove, then fry onion in bacon fat until also crisp, combine.
Preheat the oven to 350F.
Brown the butter, sprinkle in flour and stir continuously until smooth and flour is no longer raw (1-2 mins).
Slowly add the milk, whisking continuously to prevent lumps.
Bring mixture to a simmer, then add the cream cheese, whisking to maintain smoothness.
Remove from heat, season, stir in sour cream and half the cheddar. Add herbs if using.
Place cauliflower and bacon mix in greased casserole dish, add sun-dried tomatoes if using, and pour over cheese sauce. Sprinkle remaining cheddar on top and bake for 25-35 minutes.
