1. Preheat oven to 350 degrees. Cook shell macaroni according to package directions. Drain shells; rinse with cold water and drain well. Set cooked shells aside.
2. Meanwhile, for cheese filling, in a large bowl stir together eggs, ricotta, 1 cup of the Mozzarella, 3/4 cup of the Parmesan, the walnuts, parsley, salt, pepper, and nutmeg.
3. Spread 1 cup of the pasta sauce in the bottom of a 9x13-inch baking dish. Using a small spoon, carefully fill each cooked shell with a heaping tablespoon of the cheese filling. Arrange filled shells in the baking dish. Pour the remaining pasta sauce over shells. Sprinkle with the remaining 1/2 cup mozzarella cheese and the remaining 1/4 cup Parmesan. Bake, covered, about 45 minutes or until hot in the center.
