Suggest a better descriptionBeat eggs in small bowl until yolks and whites are well mixed
Heat butter in 8" skillet over medium high heat unter butter is hot and sizzling, tilting skillet to coat the bottom
Quickly pour eggs into the skillet
While rapidly sliding skillet back and forth over the heat, quickly stir eggs with a fork to spread them continously over the bottom of the skillet as they thicken
Once thickened let stand over the heat for a few seconds to lightly brown the bottom of the omelette
Sprinkle with cheese
Tilt skillet and run a spatula under edge of the omelette, then jerk sharply to loosen it from the skillet
Fold portion nearest to you over so the far side is on the bottom
Tuck sides, sprinkle with salt and pepper to taste
