Based on recipe from Bittman's, "How to Cook Everything."
Heat the oven to 400 degrees and set the rack in the middle.
Mix ingredients. Add any additional filling that you'd like. Some of my favorites are cooked tilapia, sauteed mushrooms, raw onions, cooked onions, peppers, cooked salmon, ham...
Bake 30 - 40 minutes, or until almost firm (it should still jiggle just a little in the middle). Leave to cool/set for 1 hour.
