Gluten free cheesy breaded pork chops
Grind or crush chex mixes. They can be crushed or ground together. Combine ground chex mixes, flax, seasoning, Parmesan.
Whip together egg, and oil.
Cut pocket thru side of 2 thick cut pork chops. Try to open up inside of chop as much as possible without opening sides more than necessary.
Insert Swiss cheese, fold cheese if necessary. Use toothpick to close
Brush outside with egg, oil mixture
Roll, or coat outside with dry crumb mix. (If you spoon it, and pat it on, without contaminating it, you can save leftover for next time). Let set in refrig for an hr before baking helps keep the crumbs from falling off so easily.
Bake in 400° oven for 20-25 min. Or 160° *optional: add thin slice of deli ham or precooked turkey bacon with cheese. ** only rice and corn chex are gluten free.
