Oven baked Casserole with potatoes, seasoned ground beef, and cheese
1. Using a microwave, bake the potatoes
2. Spray baking dish (9x9 inch pan) with non-stick spray.
3. Cut the potatoes into rounds (leave the skin on) and place in the baking dish
4. Cook ground beef. Season beef with: salt, pepper, garlic, paprika. Once cooked, drain grease and set aside.
5. Sauté some colored bell peppers and onion in a pan.
6. Add ground beef into the pan with the sautéed vegetables. Add can of cream of potato soup. Then stir mixture
7. Layer the baking dish: potato rounds, 1/2 shredded cheese, meat mixture, remaining shredded cheese
8. Bake for 30 minutes at 350 degrees F.
