-boil potatoes 10 mins, let cool, while cooling chop onions, peppers and garlic
-remove skin from potatoes and slice thin
-coat 13x9 baking dish with cooking spray
-lay sliced potatoes in bottom of baking dish, bake 10 mins at 350
-while potatoes bake, cook turkey, garlic, onions, peppers, mushrooms, cumin, salt and pepper in saute pan
-spread turkey mixture over potatos
-microwave velveeta, evap milk and red pepper flakes then pour over baking dish
-bake 35 mins covered at 350
