Preheat oven to 425? Slice bun tops into 1/4 inch strips. Arrange in a single layer on baking pan. Bake 8-10 minutes (lightly toasted). Remove and cool the croutons completely.
Chop onions and tomatoes. Dice the pickles.
Brown the beef. Break into crumbles.
Combine 1/2 of the red onion, pickles, ketchup, mustard. Add cooked beef. Mix well.
Arrange lettuce on a large serving platter. Spoon beef mixture over the lettuce. Top with cheese and tomatoes. Arrange the croutons around the edge of the platter.
Serve immediately.
