The crisp apples and celery in this chicken salad will remind you of the popular Waldorf salad.
Cut apples in half from top to bottom; remove and discard seeds. Hollow out centers, leaving sides about 1/8 inch thick. Brush cut edges of apple halves with small amount of lemon juice. Cover; refrigerate.
Chop removed apple pieces. In medium bowl, combine chopped apple, chicken, celery and onion. In small bowl, blend dressing ingredients. Spoon dressing over chicken mixture; toss gently. Cover; refrigerate 1 to 2 hours to blend flavors. To serve, place apple halves on lettuce-lined plates; top with chicken mixture. Garnish as desired.
