PREPARATION .
Thinly slice bell pepper
Dice onion
Mince garlic
Slice chorizo into 1/4 inch rounds.
Cut lemon into wedges
Chop parsley
Pat chicken very dry with paper towels
Season chicken on all sides with salt and pepper.
COOKING .
Cook chorizo to crisp and release oil
Reserve chorizo, leaving oil in pan
If necessary, add additional oil to pan, do not allow chorizo oil to burn!
Sear chicken in oil, cook through (5-6 min / side)
Set chicken aside, reserving oil
Soften onion, garlic, bell pepper in oil with a pinch of salt (3-4 min)
Add rice and stir to coat (1-2 minutes)
Add stock and give a final few stirs
Allow to simmer uncovered until rice is 90% done and liquid is almost completely absorbed (15-35 min)
Turn heat to high, crisping bottom of rice
Stir chorizo into rice, mixing tender and crispy rice
Chop and shred chicken and stir into rice — or present on top, whole
Season with salt
Finish with parsley and lemon
Altitudes and stoves vary liquid and cooking times wildly:
If liquid is reducing too quickly and rice is too firm, cover for the final minutes and add additional stock next time, continue with crisping instructions on stove
If rice is almost tender, but significant liquid remains, carefully drain from pan attempting not to disturb the rice; add less stock next time, continue with crisping instructions on stove
If all else fails, cook rice and vegetable mixture according to directions on the rice package and transfer to broiler on high until top is crispy
