In separate bowl combine mashed sweet potato, buttermilk, and ginger.
Using a hand or stand mixer, mix on low speed until smooth and creamy.
Cut butter with fingers into flour mixture until it resembles cornmeal.
Gently fold in sweet potato mixture and combine until dough is formed.
Knead four times and pat into a 1.5 in thick disk.
Wrap dough in plastic wrap and refrigerate for at least 10 minutes.
Once chilled, fold in bacon chunks into the center of biscuit, and gently at dough down so that it is 1 inch thick.
Using a biscuit cutter, cut dough into 1 inch round dumpling.
Cover and refrigerate for 10-15 minutes.
Biscuits are ready to drop after they have chilled.
