Put chicken in kettle. Cover with water. Add carrots, celery, onion, and seasonings. Bring to boil. Simmer 1 1/2 hours or until chicken is tender. Remove vegetables. De-bone chicken and add back to pot. Add rice and simmer until rice is tender. Cool slightly and enjoy! Best made the day before. If you need more liquid, add some canned chicken broth.
