Coat peppers liberally in olive oil, salt, and throw them on the grill with the marinated chicken breasts
(If you need a good chicken marinade, I got you!)
Pull the chicken off when it's done, let it rest a few minutes, then slice it thin
Meanwhile, char the peppers
When they're nice and charred, pull them off and let them cool
Once cooled, peel that charred skin off and discard it
Along with the cores, seeds, and other undesirables
Next, julienne the peppers and set aside with the chicken

Throw your bacon in the pot and cook over low, low, loooooow heat
I'm talking take your time, let the fat render out properly
After an episode or so of GoT (or whatever catches your fancy), check on your bacon
If it looks halfway-ish cooked, go ahead and add your onions
Once your onions begin to carmelize, go ahead and kick up the heat and add the garlic
When the garlic browns, add the stock, chicken, peppers, and bay leaf
Bring to a boil, reduce to a simmer
Cook like 20 minutes
Plate it up, and enjoy
